Event Details

he Automation Lab is our flagship technical series designed for those who want to move beyond "following a recipe" and start understanding the physics of flavor. In this Spring Series, we are deconstructing the most fundamental chemical reaction in cooking: the Maillard reaction.

We are stripping away the guesswork and replacing it with thermal precision. This isn't just a cooking class; it’s a deep dive into how heat affects cellular structures and how you can use modern tools to achieve results that are mathematically consistent every time you step into the kitchen.

What We’ll Explore

  • Infrared Surface Analysis: Learn how to use infrared thermometers to find the "sweet spot" of your cookware.
  • The Science of Searing: Understanding the precise temperature window (between 140°C and 165°C) where sugars and amino acids transform into complex flavor compounds.
  • Induction vs. Flame: A comparative study on heat recovery times and why induction is the superior choice for high-frequency sautéing.
  • Protein Denaturation: Visualizing how different heat levels change the physical structure of meat and plant-based proteins.

The Lab Schedule

  1. Phase 1: Thermal CalibrationWe start by mapping the heat distribution of various pan materials (cast iron, carbon steel, and clad stainless) using thermal imaging to understand "cold spots."
  2. Phase 2: Kinetic SautéingA practical session on the "high-shear" movement technique, ensuring that every ingredient in the pan receives uniform thermal energy.
  3. Phase 3: The Data TastingThe session concludes with a sensory analysis of proteins cooked at different degree increments to identify your personal "perfect sear" profile.

Registration Requirements

Note: This event is free of charge but requires a baseline understanding of kitchen safety. All technical equipment, including induction burners and infrared sensors, will be provided for use during the session.

JOIN THE INNER CIRCLE

Tired of flavorless pings? Get the good stuff. We’ll text you secret blueprints, first dibs on Lab seats, and the occasional kitchen hack that actually works. Pure signal, zero spam. Let's cook.
