Ingredients

For the base:

  • 1 cup raw, unpasteurized honey
  • 12–15 organic garlic cloves
  • 1 tbsp apple cider vinegar (optional for pH balance)
  • 1 sprig fresh thyme or rosemary

For the technical infusion:

  • Glass fermentation vessel with airtight seal
  • pH test strips (target range: below 4.6)

Directions

Prepare the garlic:
Peel the garlic cloves and crush them lightly using the flat side of a knife. Allow the crushed cloves to sit for 10 minutes at room temperature; this critical "rest" phase triggers the enzymatic reaction between alliin and alliinase, maximizing the synthesis of Allicin before it is submerged in honey.

Combine and coat:
Place the activated garlic and herbs into a sterilized glass jar. Pour the raw honey over the cloves, ensuring they are completely submerged. Leave approximately one inch of headspace at the top of the jar to allow for gas expansion during the fermentation process.

The fermentation cycle:
Seal the jar tightly and store it in a cool, dark environment. Every 24 hours, flip the jar upside down to ensure the cloves remain coated and to distribute the moisture released by the garlic. Briefly "burp" the jar once a day to release built-up carbon dioxide.

Monitor and store:
The honey will become thinner and bubbles will form as the wild yeasts and enzymes interact. After 2–4 weeks, the fermentation will stabilize. Test the pH to ensure a safe, acidic environment. Use the resulting synthesis as a potent nutritional glaze or a functional wellness tonic.
